Thanks to this easy recipe, we fell in love with it. You can make this cake quickly without a lot of fancy equipment. Ingredients:

2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups grated carrots (about 6-7 medium carrots)
1 cup vegetable oil
4 large eggs
2 cups granulated sugar
2 teaspoons vanilla extract
1 cup chopped walnuts or pecans (optional)
For the cream cheese frosting:
8 ounces cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
