Chocolate and coffee cake with lotus cream topping

Cake Ingredients:

3 eggs
A pinch of salt
150 g) Sugar
8 g of vanilla sugar
80 ml of oil
100 ml of milk
1 tablespoon of instant coffee
180 g of flour
20 g of bitter cocoa
15 g of baking powder
Garnish:

1 tablespoon sugar
1 tablespoon corn starch (well filled)
1 tablespoon instant coffee
300 ml milk
1 tablespoon lotus cream
Method Prepare the cake dough:

Preheat the oven to 180°C (350°F).
In a large bowl, beat the eggs with a pinch of salt until frothy.
Add 150g sugar and 8g vanilla sugar. Mix well.
Gradually add 80ml oil, stirring continuously.
Pour in 100ml milk and 1 tablespoon instant coffee. Stir until well combined.
Sift in 180g flour, 20g bitter cocoa and 15g baking powder. Gently fold into the mixture until smooth.
